Deep Fried Cod with Chilli Mayonnaise

Mixing chilli sauce with the mayonnaise gives an unexpected flavour. It goes well with vegetables too.

Ingredients

Cod fillets 200g
Flour 2-3 tbsp
Beaten egg 1
Breadcrumbs 3-4 tbsp
Chilli sauce or paste 1-2 tbsp
Mayonnaise 3-4 tbsp
Lemon juice 1-2 tsp
Salt & pepper as required
Oil for frying as required

Method

Here are the ingredients. Next to the mayonnaise is the chilli sauce.

Cut the cod fillets into large pieces. Mix the flour with the salt & pepper and coat the cod on both sides. Run the cod through the beaten egg and coat liberally with the breadcrumbs.

Deep fry the cod at 180C until golden brown.

Drain on kitchen paper to remove excess oil, this will make them nice and crispy.

Make the sauce by mixing the chilli sauce, mayonnaise, salt & pepper and lemon juice (sorry, I forgot to take a photo).

Tips & Note

Use your favourite chilli sauce. If it's shop bought, use a less sweeter one. I recommend one that contains onions, garlic and herbs.
★ 1 tbsp = 1 tablespoon 15ml
★ 1 tsp = 1 teaspoon 5ml
