Baked Rice with Tomatoes

The sourness of tomatoes really whets your appetite! (The cooking time doesn't include time to cook the rice).

Ingredients

Tomatoes 5
Cooked rice for 1 person
Butter 20g
Curry powder 1 tsp
Salt 1/4 tsp
Cheddar cheese (grated) 100g
Cayenne pepper (optional) as required
Italian parsley as required

Method

Pre-heat the oven to 200℃.

Slice the tomatoes to a thickness of about 5mm.

Add the butter to the hot cooked rice, mix and sprinkle evenly with the curry powder and salt and mix again.

Put half the amount of tomato slices in an oven tray.

Put Step 3 on top of Step 4.

Sprinkle half the amount of cheese on top of Step 5.

Put the rest of the tomato slices on top of Step 6, then sprinkle with the remaining cheese.

Put in the hot oven and bake for about 20 minutes. Garnish with the chopped Italian parsley and the cayenne pepper if you like.

Tips & Note

●It's better if you can find large tomatoes, I used 80g tomatoes.
● As moisture is released from the tomatoes, there is no need to apply oil or butter to the oven tray.
