Italian Deep Fried Tomatoes

Ingredients

Tomatoes 4
Parma ham slices 8
Basil leaves 8
Plain flour as required
Beaten egg 1
Oil (for shallow frying) as required
☆Breadcrumbs 50g
☆Parmesan cheese 30g
☆Mixed herbs 1 tsp
●Extra virgin olive oil 1 tbsp
●Balsamic vinegar 1 tbsp
●Onion 2 tbsp
●Fresh parsley 1 tbsp
●Salt 1/4 tsp

Method

Cut the tomatoes off at both ends, then into 4 slices each.

Finely chop the ends of the tomatoes and mix together with the ●sauce ingredients (chop the onion and parsley finely).

Spread out the parma ham and use it to wrap up a tomato slice, a basil leaf and another tomato slice on top.

Repeat Step 3 to make 8 pieces.

Coat each piece with flour → beaten egg → ☆ and hold firmly.

Place enough oil in a frying pan to a depth of about 1cm and heat it. When it reaches about 180 °C, fry Step 5.

Shallow fry for about 2 minutes, then turn over and fry for a further 2 minutes. When nicely browned, remove and drain well.

Transfer to a serving dish, alongside the sauce made at Step 2.
