Ramen with a British Beef Twist

Tonkotsu ramen (with pork) is quite a boom in the UK...but beef ramen can taste delicious too! This recipe is for 2 people.

Ingredients

Tinned beef broth (400g) 1
Beef pastrami slices 10
Leek 6cm
Spring onion 1
Red chilli 1
Ramen noodles for 2 people
Stock:
Beef stock cube 1
Chicken stock cube 1/2
Soy sauce 2 tsp
Salt & pepper a good pinch each
Hot water 600ml

Method

Use a 6cm piece of the white part of the leek. Remove the core, then finely shred it and soak in cold water.

Put the chicken and beef stock cubes, soy sauce, salt & pepper in a bowl, pour in the hot water and whisk well to dissolve the cubes thoroughly.

Pour the stock from Step 2 into a deep frying pan. Bring to the boil, then turn the heat down to medium. Add the tin of beef broth and whisk well.

Cook your favourite noodles. Drain them well and put into a bowl. Pour the hot beef stock on top.

Place the pastrami slices around the edge of the bowl, sprinkle the finely chopped spring onion and garnish with the shredded leek.

Adorn with the sliced red chilli and enjoy!
