Ultra Healthy Broccoli Miso Soup

Broccoli is rich in vitamins B & C, carotene and iron. The stems are also delicious, don't waste them!

Ingredients

Hot water 600ml
Dashi stock granules (or fish stock cube) 1/2 tsp (or 1)
Miso 35-40g
Broccoli bulb with stems 1
Onion 1/3

Method

Use the whole of the broccoli including the stems.

The stems are more dense than the florets, so slice them about 2mm thick.

Boil the water in a pan and add the dashi stock, sliced onion and broccoli stems and cook for 2 minutes.

Then add the broccoli florets and boil for a further 2 minutes. Turn the heat down to medium and dissolve in the miso. Job done! You could add a beaten egg on top for extra texture and flavour.

Tips & Note

Miso soup should ideally be about 200ml per person after everything is cooked.
