Classic Daikon (Mooli) and Wakame Seaweed Miso Soup

You can't beat a simple classic Japanese daikon miso soup.

Ingredients

Daikon radish (mooli) 150g
Wakame seaweed (dried) 2 tbsp
Sesame oil 1 tsp
Hot water 600ml
Dashi stock granules 1/2 tsp
Miso 35-40g
Spring onion 1/2
Chilli powder as you like

Method

Mooli is becoming easier to find nowadays but they're a bit smaller than we know them in Japan. Peel the mooli and cut into thin strips.

Put the sesame oil in a pan and add the daikon. Stir fry for 1 minute on high heat, then add the hot water and dashi stock and boil for 3 minutes. Turn the heat down to medium and dissolve in the miso and add the wakame seaweed.

Transfer to a soup dish and sprinkle with the finely chopped spring onion. Add some chili powder if you like. Enjoy!
