Celery and Wakame Miso Soup

This has a lovely hidden taste of ginger that will keep you warm!

Ingredients

Hot water 500ml
Celery (including leaves) 100g
Dashi stock granules 1/3 tsp
Ginger slices 2
Miso (red or mixed) 35-40g
Dried wakame seaweed 1 tsp
Chilli powder as you like

Method

Use celery leaves to get a richer aroma. Rehydrate the wakame seaweed in hot or cold water. Slice the ginger to the size of a 10 pence piece then chop into needles.

Put the hot water in a pan to boil and add the dashi, wakame, ginger and stem part of the celery. After 1 minute add the celery leaves and turn down to medium heat. After 2 minutes add the miso dissolved in water.

Serve in bowl, cup or mug and sprinkle with the chilli powder if you like.
