Chinese Leaf & Beaten Egg Miso Soup

You can use anything left in the fridge to make a good and flavourful soup!

Ingredients

Hot water 450ml
Miso (red or mixed) 40g
Dashi stock granules 2-2.5g
Chinese leaves 80g
Egg 1
Spring onion 1/2

Method

Chop the Chinese leaves into 1cm pieces, this size will work well with the beaten egg.

Put the dashi stock into the hot water in a pan and boil the white parts of the Chinese leaves. After 1 minute, add the green top parts.

Cook for 1 minute then turn the heat down to medium. Add the miso dissolved in water to prevent lumps.

Pour in the well beaten egg and use a spoon to swirl it around once gently. Transfer to a bowl and sprinkle with finely chopped spring onions.

Tips & Note

Use a vegetable stock cube (1/3 or 1/4) if you don't have dashi stock granules.
