Ingredients

Beansprouts 100g
Polish smoked ham slices 2
Spring onion 1/2
Egg 1
Hot water 400ml
Fish stock cube 1
Miso (red or mixed) 45-50g
Chinese chilli bean sauce (Tobanjan) 1 tsp
Granulated sugar 1tsp
Salt & pepper as required
Sesame oil 1 tbsp

Method

Here are the ingredients. i used a Knorr fish stock cube. The miso is from Shinshu, Nagano. The egg should be half boiled for best results.

Put the chicken stock cube, sugar, miso and chilli bean sauce into the hot water. Whisk to dissolve well.

In a large frying pan, put the olive oil. Add the whole ham slices and the lightly seasoned beansprouts and fry on high heat for 2 minutes..

Add the soup from Step 2 and simmer for 3 minutes on high heat.

In the meantime, boil some hot water in a pan and cook the egg noodles - I used Sharwood's fine egg noodles and cooked them for 3 minutes.

When the noodles are cooked, drain well and put into a serving bowl. Pour in the soup from Step 4 and pile up the beansprouts on top. Place the ham to the side.

Add half the boiled egg, sprinkle the finely chopped spring onions on top and enjoy!

●I've tried fine egg noodles from both Sharwood's and Blue Dragon. I think Blue Dragon works better in this recipe, but it's still not necessarily perfect - my research continues...
●For spice lovers, add more chilli bean sauce.
