Apple & Elderflower Granita

A cool and refreshing end to a rich meal.

Ingredients

Apple & elderflower juice 200ml
Sugar 1 tbsp
Lemon juice 2 tsp
Salt a pinch
Apple 1/2
Grenadine 2 tsp

Method

Finely grate the apple. Put all the ingredients except the grenadine into a jug and mix to dissolve the sugar.

Pour into a freezer container with lid and freeze.

After 3 hours, remove from the freezer and use a fork to score and break up the ice crystals. Return to the freezer for another 3 hours and repeat. Keep in the freezer until needed.

Before serving, remove from the freezer and score through with a fork again to loosen the granita crystals.

Fill a wine glass up to a third with the granita. Pour in 1 tsp grenadine then fill to the top with more granita. Serve immediately.

This is the Copella Apple & Elderflower juice I used. It's a favourite drink of mine and I thought it would be wonderful as a granita.

Tips & Note

The actual preparation time is almost nothing but you need to allow time for the granita to freeze, so you could start making this on the morning before your party. The grenadine gives it a spectacular colour.
