Roast Chicken Tortilla Wraps

A super easy lunch the next day after your roast dinner, it's tasty and filling.

Ingredients

Tortilla wraps 4
Roast chicken slices as required
Tomato ketchup 4 tbsp
Red chilli powder 1/2 tsp
Cumin powder 1/2 tsp
Coriander powder 1/2 tsp
Lemon juice 1/2 tsp
Onion (small) 1
Your favourite lettuce leaves as required
Salad cream as required

Method

In a bowl, mix the tomato ketchup with the chilli, cumin and coriander powders and lemon juice.

Dry fry the tortilla wraps in a frying pan on medium heat for 1 minute each side. Allow to cool slightly before adding the fillings.

Spread a quarter of the sauce from Step 1 onto a wrap. Add the chopped roast chicken on top along the centre and place thinly sliced onion rings on top.

Finely shred the lettuce and place on top. Drizzle with salad cream over the top.

Now fold the wrap: fold up the bottom 1/4 up, then the left and right sides in towards the middle.

Tips & Note

You could use garlic mayonnaise instead of salad cream if you like, but for a really healthy version, use yogurt or creme fraiche. Your salad ingredients could include tomatoes or radishes to give a colourful finish.
