Fried Eggs in Orange Pepper

Use the colourful pepper as the mould to make this eye-catching dish.

Ingredients

Pepper (orange) 1
Eggs 2
Salt & pepper as required
Vegetable oil 1 tbsp

Method

I used an orange pepper this time. Cut into broad slices (1.5cm) and use the centre two. Use the outer slices in a salad if you like.

Microwave the peppers for 1 minute.

Put the oil in a large frying pan and add the pepper rings. Crack a egg into the centre of each ring.

Add some water to the pan and put the lid on to steam fry for 5 minutes on medium heat. Check the egg is cooked.

Transfer to a serving dish and sprinkle with salt & pepper of your favourite seasonings. You can also dip some toast into it if you like.

Tips & Note

Be careful when you add the water to the pan at Step 4 - if the pan is too hot, the oil will splash so be sure to have the pan on medium heat. Use any colour peppers you have in the fridge.
