Rollmop Sushi Batella Style

It's so easy if you have this mould, it looks like genuine sushi!

Ingredients

Rollmop herring tub 1
Sushi rice for 1
Sushi vinegar (for the rice) 3 tbsp
Sushi vinegar (for the fish) 3 tbsp

Method

I bought this tub of rollmop herrings, you can make two batella mould sushi from this amount.

Remove the herrings from the tub and pat dry. Put on a plate and add 3 tbsp sushi vinegar. Keep aside for 30 minutes then pat dry again.

Put the cling film into the batella mould and lay in the herrings skin side down. Try to get the herrings to stick up a little along the top and bottom so that the next layer of rice will fit inside it.

There should be some pickled onions in with the herrings - lay these on top inside the mould. Top with half of the sushi rice. Put the batella mould lid on and press down firmly.

Remove the sushi from the mould and cut into 6 equal pieces with a wet knife.

You can serve with some wasabi on top, if you like.

I used Mizkan sushi vinegar, available in London.

Tips & Note

●You normally use 4 tbsp sushi vinegar for 1 gou (150g uncooked rice), but the herrings are already pickled, so use only 3 tbsp
