Deep-fried Mackerel With Porridge Oats in a Leek Sauce

Ingredients

Mackerel fillets 2
Soy sauce 小さじ1
Sake 小さじ1
Flour as required
Egg white 1
Porridge oats 40g
Vegetable oil as required
Leek (small) 1
Sesame oil 1 tsp
Sauce:
Soy sauce 2.5 tbsp
Chinese chilli bean sauce 1/2 tsp
Vinegar 1/2 tbsp
Sugar 1/2 tbsp
Sake 1 tbsp

Method

Slice the mackerel fillets into 4 and marinate in the sake and soy sauce. Cut the leeks into half vertically, then finely slice.

Dredge the fillets in flour first, then dip in beaten egg before coating in the porridge oats. Deep-fry in the pre-heated vegetable oil (170C).

In another pan, heat the sesame oil on low and fry the leeks for 2-3 minutes.

Put all the ingredients for the sauce into this pan with leeks, bring to the boil and switch off. Pour over the fried mackerel.

Tips & Note

Before Step 2, score the mackerel skin to prevent it curling up.
You could add finely chopped garlic or onions with the ingredient for the sauce, this will also be nice.
If you put wild rocket as a garnish, it will be like a mediterranean dish!
