Squid Linguine

Frozen squid is more than good enough.

Ingredients

Tesco prepared squid 5
Red chilli 1
Cherry tomatoes 8-10
Capers 1 tbsp
Anchovy fillets (finely chopped) 2
Garlic 1 clove
Fresh parsley heaps
Fish sauce (nam pla) 1 tbsp
Linguine 120g
White wine 2 tbsp

Method

This is Tesco prepared squid, 410g for £4. It says it's from the Indian ocean. Very handy to keep in the freezer.

Here are all the ingredients I used. Adding fish sauce gives the dish a seafood flavour.

Start cooking the linguine. Put salt 1-1.5% the amount of water (for example 10-15g salt for 1l water).

In a large frying pan, put 2 tbsp olive oil on medium heat and add the anchovy.

Add the squid and white wine when the anchovy starts crackling and cook for 1 minute.

Add the sliced garlic, chilli, capers, tomatoes and fish sauce. Tear the parsley by hand and throw into the pan.

Add two ladles of pasta water.

When the past is ready, add to the frying pan and mix very well for 1 minute to thoroughly combine with the sauce.

Put onto a serving plate. You're welcome to pour over some extra virgin olive oil but not cheese!

Tips & Note

●If you're lucky enough to have clams or muscles, you can add these at Step 6 and steam cook.
●Spaghetti is also fine, but for some reason, chefs seem to use linguine for seafood pasta dishes, so I did the same.
