Porcini & Mushroom Pasta

Use a porcini mushroom paste and combine with your favourite mushrooms to make this lovely dish.

Ingredients

Porcini mushroom paste 2 heaped tbsp
Pasta for 2 people
Your favourite mushrooms 2 cups
Onion 1/2
Garlic 1-2 cloves
Butter 2 tbsp
Chicken stock granules 1 tsp
Water 2 cups
White wine 1 cup
Parmigiano reggiano as you like
Parsley as you like

Method

This is the porcini mushroom paste, you can easily buy it in supermarkets.

Finely chop the garlic and onion, coarsely chop the mushrooms. I used normal white mushrooms and fresh porcini.

Put the butter in a frying pan on medium heat and add the onion. When it's translucent add the garlic and mushrooms. Start boiling the pasta.

When the mushrooms are soft, add the wine, chicken stock and porcini paste and simmer to reduce the sauce by half.

When the pasta is ready, drain and add to the pan. Mix well and serve sprinkled with grated Parmigiano reggiano and finely chopped parsley.

Tips & Note

You can use any pasta you like, but for the mushroom sauce, flat long pasta like papardelle or fettucine works well.
