Seabass, Potato & Aubergine Bake

Delicious when just baked and looking golden brown!

Ingredients

Seabass fillets 2
Potatoes 1-2
Aubergine 1
Tomato sauce 4-5 tbsp
Breadcrumbs 6 tbsp
Parsley 2 tbsp
Salt & pepper as required
Olive oil as required

Method

Slice the seabass into half. Thinly slice the potatoes and aubergine. Finely chop the parsley.

Put the vegetable oil in a frying pan and pan fry both sides of the aubergines until nicely browned.

Arrange the slices of uncooked potato and fried aubergine in a spiral in an ovenproof dish and season with salt & pepper. Drizzle with olive oil.

Put into a preheated oven 210-220C for 10 minutes.

Remove from the oven and spread the tomato sauce over the top. Lay the seabass on top.

Season with salt & pepper and drizzle with olive oil. Put back in the oven and bake for a further 10 minutes.

In the meantime, mix the breadcrumbs, salt & pepper, parsley and olive oil in a bowl.

Remove the dish from the oven and sprinkle over Step 7. Put back in the oven until nicely browned.

Tips & Note

●You can use ready made tomato sauce if you like, but you can easily make it with tomatoes, garlic and olive oil.
