Omelette Pasta

The whole family will enjoy this big dish.

Ingredients

Spaghetti 60g
Eggs 4
Vegetable oil 3 tbsp
Butter 20g
Onion (small) 1
Frankfurter sausages 2
Green pepper 1/2
Ketchup 3 tbsp
Wholegrain mustard 1 tbsp

Method

Break the spaghetti into half, then cook as normal in salted water.

Cut the onion onto half then finely slice. Roughly chop the green pepper. Slice the sausages into 1cm diagonal pieces.

Put the oil and butter into a frying pan and stir fry the onions.

When softened, fry the green pepper and sausage.

Drain Step 1 and add to Step 4 with the ketchup and mustard and mix well. Turn off the heat and transfer to a plate.

Wash the frying pan and dry or use a new one.

Put 1 tbsp oil and 2 beaten eggs in the frying pan.

Swirl the pan to spread out the eggs evenly to make an omelette. On the bottom half, put half of Step 5.

Just before the eggs firm up, fold the top half of the omelette over the spaghetti half.

Place a large plate onto the frying pan and turn over quickly. Repeat to make 2 spaghetti omelettes.

Put some ketchup on top of the omelettes if you like, or your favourite salad vegetables such as tomatoes or cucumber.

Tips & Note

Don't hesitate for a second when you turn over the omelette onto a plate at Step 10. Check where you want to place the omelette, then just go for it! Your confidence will be rewarded!
