Swede Tortilla

Using butternut squash instead of potato worked for me before, so this time, I tried it with swede.

Ingredients

Swede (medium) 1/2
Onion (medium) 1/4
Eggs 3
Salt 2 pinches
Olive oil 7-10 tbsp

Method

This is the onion and swede.

Slice the swede 3-4mm thick. Chop the onion into half then slice 5mm thick.

Put all the olive oil into a frying pan on medium heat. Add Step 2 and fry (or simmer). Add one pinch of salt.

It will take 15 minutes to cook well. If the vegetables crush easily with a spoon, it's done, so mash it all in the frying pan.

In a bowl, crack the 3 eggs and add the other pinch of salt. Beat lightly. Drain Step 4 as much as possible, then add this when handhot to mix well with the eggs.

Use a 20cm diameter frying pan and add a touch of oil. When it's very hot, pour in Step 5 and keep mixing until it begins to set firmly.

Turn the heat down to medium and cook for 3 minutes. Place a flat plate on top and turn the frying pan over. Slide the tortilla back into the frying pan to cook the other side.

Cook for 2 minutes and transfer to a serving dish. Slice to your preferred size wedges and serve.

Tips & Note

●Swede has quite tough fibres, so you need to cook it for a long time on a medium heat but try not to burn it.
●Drain as much oil as you can at Step 5, otherwise the tortilla will be too oily.
