Cod Roe Spaghetti

Ingredients

Tinned pressed cod roe 1 (200g)
Dashi stock concentrate 3 tbsp
Mirin 2 tbsp
Pasta for 6 people
Shiso herbs or spring onions 6
Nori sheet 1
Butter or margarine 6 tbsp
Salt, pepper, lemon as you like

Method

I used this Princes pressed cod roe tin, available in most supermarkets. This is enough for 6 people.

Put the cod roe in a bowl and flake with a fork. Add the dashi stock and mirin.

Start cooking the pasta. In the meantime, finely chop the nori and spring onions or shiso herbs.

Put 1 heaped tbsp cod roe, 1 tbsp butter or margarine and 1 spring onion per person in a bowl and mix together.

Add the pasta to the bowl and mix then transfer to a serving dish. Sprinkle with shredded nori. Additionally, you could add Tabasco or dried chilli flakes or lemon, cream or mayonnaise.
