Aubergine Caviar

Ideal as a canape when entertaining at home.

Ingredients

Aubergines 2
Olive oil as required
Garlic 2-3 cloves
Anchovy fillets 4
Salt as required
Pomegranate as required
Your favourite bread as required

Method

First grill the aubergines. Place on a lined oven tray.

Roast at 190C for 45 minutes. Remove and allow to cool.

When hand hot, peel and mash the flesh with the back of a fork.

Put the olive oil in a frying pan and fry the finely chopped garlic on low heat until brown.

Add the anchovy and mix well. Add the aubergine puree and mix well. Season with salt.

Transfer to a ramekin and drizzle with extra virgin olive oil.

Spread thickly onto your favourite bread and sprinkle with pomegranate - enjoy!

Tips & Note

You can grill an aubergine in many ways but this is easiest as you leave it in the oven for 45 minutes and don't worry about it. This is my favourite method! Drizzling the olive oil at the end not only gives it huge flavour but also stops it from going dry. Adding the salty anchovies still doesn't make this salty enough - it will taste bland if you don't season it at Step 5.
