Rusk-like Biscuits

I was actually trying to adapt a Portuguese sponge cake but the result was quite disappointing, but I discovered a rescue recipe online, so here it is!

Failed sponge cake 1 tin

Method

Preheat the oven 120C and put a baking sheet onto a tray. Place the sliced sponge cake (6-8mm thick) onto the tray.

Bake for 15 minutes each side.

Leave it in the oven and when it's cooled down, cut into bitesize pieces.

Arrange prettily onto a serving dish and enjoy at teatime!

Tips & Note

●The outside is already browned, so be careful not to make it too dark and burn it. Bake on a low temperature slowly.
●While it bakes, it's quite soft so turn it over gently so it doesn't break. When it's fully baked, it will be nice and firm.
