What is...baby buttonhole kale?

Wow, this baby buttonhole kale is one vegetable we've not seen before. It's a whole dark purple bulb with pink veins, not just the dark green leaves you would normally associate with kale, and that's because it's a cross between kale and brussels sprouts. It's got the familiar round head of a sprout, nestled in frilly leaves. There's not much information about this member of the cabbage family; indeed, it's pretty hard to find the vegetable itself. We found it online at Asda in a pack of two but it's only available instore at selected Waitrose branches. Cooked in the same way as other kale (steamed, boiled or stir-fried), it's rich in anti-oxidants and provides a variety of vitamin and mineral nutrition. In the looks department, it would certainly win a red rosette.
