With deep purple aubergines in season, it's the perfect vegetable for all sorts of dishes. We're used to aubergines being pleasingly soft and mushy with an unmistakeable hint of autumn just around the corner, but this recipe will give it a new twist. Pretty much anything coated in breadcrumbs is a winner, and aubergines are no exception. Forget the carbs of a bread pizza and try this instead. You can adapt to any variety of passata (hot and spicy or mild) and top with a whole range of cheeses including Pepper jack which already has peppers in it, or an applewood smoked cheese. Garnish with some parsley if you're serving it to guests.
