Leek and Potato Miso Soup

Ingredients

Leek 1
Potatoes 60-80g
Vegetable oil 1 tbsp
Hot water 600ml
Dashi stock granules 1/2 tsp
Miso 35-40g

Method

The leek might still have some soil in it, so cut it in half and then to 8cm lengths to wash thoroughly. Slice the potatoes thinly so they cook fast.

Put the vegetable oil in a pan and stir fry the leeks and potatoes for 3-4 minutes on high heat until the leeks are lightly browned.

Pour in the hot water, add the dashi stock granules and cook on medium heat for 7-8 minutes. Turn the heat down to low and dissolve in the miso - it will be sweet and delicious.
