Delicious Pork with Sweet Simmered Daikon

It's a dish that you can cook quickly but the delicious umami flavour goes right into the daikon.

Ingredients

Pork loin fillet 1
Salt & pepper as required
Sake 1 tsp
Soy sauce 1 tsp
Potato starch (or cornflour) 1 tsp (or 1 tbsp)
Daikon (mooli) 10-12cm
Spring onion 1
Sesame oil 1 tbsp
Seasonings:
Oyster sauce 1.5 tbsp
Chinese chilli bean sauce (Toban-jan) 1 tsp
Soy sauce 1 tbsp
Sugar 1.5 tbsp
Mirin 1 tbsp
Water 3 tbsp

Method

Peel the daikon thickly and cut into 3mm slices, then cut into half moons. Chop the spring onion diagonally.

Slice the pork loin and lightly season with the salt & pepper. Add the soy sauce, sake and potato starch and rub in well by hand.

Put the sesame oil in a frying pan and add the pork and daikon. Stir fry for 10 minutes on medium heat.

Once the daikon is cooked and nicely soft, add all the seasoning ingredients and spring onions and stir fry for 3 minutes.

Adjust to your taste, adding soy sauce or sugar as you like. If it's too thick, add a touch of water.
