Sirloin Steak in Japanese Soy & Oyster Sauce

What a fantastic combination to mix the soy and oyster into a sauce for the tender sirloin.

Ingredients

Sirloin steak fillet 200-250g
Salt & pepper 2 pinches each
Vegetable oil 1 tsp
Sauce:
Garlic 1 clove
Vegetable oil 1 tsp
Sake (or white wine) 2 tbsp
Soy sauce 2 tbsp
Mirin 2 tbsp
Oyster sauce 2 tbsp
Butter 1 tsp

Method

Remove the excess fat (but keep) and sinew from the steak to prevent the meat from shrinking. Sprinkle with lots of salt & pepper on both sides and keep aside for 5 minutes.

Put the vegetable oil in a large frying pan on high heat. Add the removed fat and the steak and fry for 3 minutes. Turn the steak over, turn the heat down and fry for 3-4 minutes.

Remove the steak and wrap in scrunched foil to rest for 5 minutes.

Make the sauce: in the same frying pan, add the vegetable oil and the sliced garlic and fry until brown on medium heat.

Just before it burns, add the soy sauce, mirin and sake and reduce by half on medium heat.

When the sauce has reduced, add the oyster sauce and butter and the juice from the steak in the foil. The sauce will thicken.

Transfer the steak to the serving dish and pour over all the sauce before serving. My picture shows it being served with slices of cooked potato and carrot.

I also enjoyed this once with Uncle Ben's mushroom rice on the side - just microwave for 2 minutes. It was so quick, handy and pretty tasty!
