Prawn Jambalaya

A rice dish that's a bit spicy.

Ingredients

Prawns 15
Parsley as required
Butter, oil as required
Salt & pepper as required
Chicken stock 3 cups
Paella rice 2 cups
Bayleaf 1
Tomato puree 1-2 tsp
Tomato 1
Cajun mixed spice 3-4 tsp
Garlic 2 cloves
Green pepper 1
Celery 1
Onion 1
Sausages 3
Lemon as required

Method

Leave 4-5 prawns for later to garnish with the head and tails on. Wash all the prawns thoroughly removing the black thread down the back.

De-skin the sausages and break the sausage meat into small pieces with your fingers.

Finely chop the onion and garlic, and roughly chop the celery and green pepper.

Use a large frying pan. Add butter or oil and heat up on a medium heat. Add the onions and fry until golden brown, then add the sausage meat pieces.

Peel the skin off the tomato and dice it. Add to the frying pan with the tomato puree and stir until the liquid has gone.

Add the garlic and Cajun spice mix and stir for 1-2 minutes.

Add the rice (no need to wash) and mix well.

Add the chicken stock and bayleaf. Stir and bring to the boil then turn down to a simmer for 10 minutes.

Add all the prawns and cover with a lid. Cook for 5 minutes before turning off the heat and leaving to rest for 10 minutes.

Take out 4-5 prawns for the garnish. Add seasoning, a small knob of butter and the parsley and mix well.

Put onto a serving dish and decorate with the prawns. Lemon wedges would also look good.

Tips & Note

You can also use Cajun seasoning instead of Cajun spice mix.
I suggest using the prawn head, white wine and onion added into the chicken stock for a heartier flavour.
