Stir Fried Baby Buttonhole Kale with Chunky Croutons

An ideal colourful salad dish to go with your barbecue. Actually, the croutons are very moreish in themselves!

Ingredients

Baby buttonhole kale bulb 1/2
Bread loaf (small) 1/2 (200g)
Garlic 1 clove
Olive oil 1 tbsp
Salt & pepper a little
Spring onion greens 2

Method

This is the baby buttonhole kale, it's so pretty and colourful! I bought it in Waitrose. Take off the outer leaves and use the smaller inner ones. Chop the garlic.

Make the croutons: use your preferred loaf (I used a round wheat, spelt & rye loaf from Morrisons) and pull apart into large pieces.

Put in a bowl with the olive oil, salt & pepper and mix to combine. Put onto an oven tray and in a preheated oven 180C for 10 minutes.

In the meantime, fry the garlic in some oil in a frying pan on low heat. Add the kale and stir fry for 5 minutes. Season lightly with salt.

Transfer to a serving dish and top with the croutons. Garnish with chopped spring onion greens.

Tips & Note

It's actually better to use bread that's not so fresh to make the croutons, it's a good way of using it up. Even though you are using the inner leaves, the kale needs good cooking time otherwise it will remain hard.
