I put an Italian twist on a southern smoked meat by taking a Maple Bourbon pork belly recipe and replacing the bourbon with marsala to make a Maple Marsala Smoked Pork Belly.
I simply roasted any vegetables I had, they go well with fish or meat. The key is the dry roasted almonds on top to give an unusual and surprising crunchy texture.
