Egg Yolk Muffins Portuguese Style

Make this at the same time as using the egg whites for the Portuguese recipe Meringue Molotov.

Ingredients

Egg yolks 8
Butter 100g
Self raising flour 200g
Granulated sugar 200g
Vanilla extract few drops

Method

Preheat the oven 180C.

Put the melted butter in a bowl and whisk well. Add the egg yolks, sugar and vanilla extract and whisk again.

Sift the flour into the bowl.

Fold in the flour with a spatula. Don't over mix, fold in only until the flour disappears.

Put paper cases into a muffin tray and drop the batter in, filling to half way.

There is no egg white so the batter is a bit firm, but this is OK.

Bake for 20 minutes and it will rise like this. The next day or even 1 day after that is the best day to eat these.

Tips & Note

●Because there is no egg white, it seems the batter might be too heavy, but it will work fine. This is a very Portuguese style muffin with lots of egg yolks.
●Have a go at the Molotov that uses 8 egg whites! It's recipe ID 994.
