Stir Fried Chicken with Pickled Plum (Umeboshi)

You get a lovely sourness from the pickled plum!

Ingredients

Chicken breast fillet 1
Celery 2
Spring onions 3
Ginger 1 thumb
Vegetable oil as required
Flavouring:
Salt & pepper a little
Sake 1 tbsp
Sesame oil 1 tsp
Potato starch 1 tsp
Seasonings:
Pickled plums (umeboshi) 2
Sugar 1 tbsp
Sake 1 tbsp
Vinegar 2 tbsp
Water 3 tbsp
Potato starch 1 tsp

Method

Cut the chicken into strips 1cm thick. Season with salt & pepper and rub with sake, sesame oil and potato starch.

Finely slice the celery and spring onions diagonally. Cut the ginger into fine strips.

Remove the stones from the pickled plums and finely chop. Mix together with the other seasoning ingredients in a bowl.

Put the vegetable oil in a frying pan and add the ginger. Add the chicken and fry until browned. Add the celery and fry further.

Add the seasonings into Step 4 a bit at a time. Add the spring onions and continue to fry further.

Transfer to a serving dish and sprinkle with some chopped coriander before serving, if you like.

Tips & Note

Cut the chicken in the direction of the fibres, so it doesn't dry out.
