Octopus & Potatoes Simmered In A Tomato Broth

Ingredients

Uncooked octopus 350-400g
Or cooked octopus 200-250g
Potatoes 2-3 (200g)
Garlic 2 cloves
Onion 1
Olive oil 2 tbsp
White wine (or rose) 50ml
Tinned tomatoes 1
Bay leaf 1
Paprika powder 1 tsp
Sea salt 1 tsp
Black pepper pinch
Olives (if you like) 25g
Flat leaf parsley (finely chopped for the garnish) as required

Method

Cut the octopus into course pieces. Dice the potato into 1cm square. Finely chop the onion and garlic.

Put the olive oil into a pan and heat on medium. Add the onions and garlic and a bit of salt. Stir-fry until softened.

Add the diced potatoes and coat them with the oil. Now add the octopus.

Add the bay leaf and wine and put on the lid.

Simmer until the octopus is cooked, then add the tinned tomato and crush. Add the paprika, sea salt and black pepper. Simmer for a further 30 minutes.

It's ready when the potatoes are cooked through.

Tips & Note

Octopus is available in Asian supermarkets in London, but also in some Morrisons or Greek fish supermarkets.
