Leek, Bacon & Tomato Hotpot

A lovely sweetness from the leeks, saltiness from the bacon and sourness from the tomatoes...

Ingredients

Bacon rashers 2
Chinese leaves 2
Celery 1
Leek 1
Mushrooms 3
Cherry tomatoes 4
Vegetable oil as required
▼Chicken stock granules 1 tbsp
▼Soy sauce 1 tbsp
▼Mirin 1 tbsp
▼White wine 1 tbsp
▼Water 100ml
Potato starch in a bit of water as required
Egg 1

Method

Put the oil in a frying pan and fry the finely chopped bacon on medium heat.

When it's cooked, add the leek cut into 1cm pieces and the finely sliced celery and fry for a few minutes. Add the remaining chopped vegetables and fry further.

When all the vegetables are cooked, add the ▼ingredients and fry. Add the potato starch in water to thicken the sauce.

Pour over the beaten egg - it's ready to serve when the egg is half cooked.

Tips & Note

The bacon will taste quite salty, so don't add too much salt or soy sauce.
