Ingredients

Chicken thighs (large) 2
Salt 1 tsp
Pepper 1 tsp
Chilli powder 1.5 tsp
Garlic powder 1 tsp
Rosemary sprigs 2
Vegetable oil 1 tbsp
Lemon 1/4

Method

Dredge the chicken all over with a mixture of the salt & pepper, chilli powder and garlic powder and rub in thoroughly. Keep aside for 5 minutes.

Put the oil in a frying pan on medium heat and add the chicken, skin side down. Put the rosemary on top and baste the chicken with the oil. Cook for 7 minutes

Turn the chicken over and fry for 2 minutes, basting all the while. Turn the chicken over again and fry for 1 minute.

Transfer the chicken onto a serving dish, skin side down to cut more easily. Serve with the lemon.
