Aromatic Honey & Garlic Chicken

Ingredients

Chicken thigh (large) 1
Salt & pepper 1/2 tsp each
Vegetable oil 1 tsp
Butter 1 tbsp
Garlic 3-4 cloves
Honey 2 tbsp

Method

Cut and flatten the chicken thigh to make the thickness as even as possible. Season with the salt & pepper and keep aside for 5 minutes.

Put the oil in a frying pan and add the chicken skin side down and fry for 5 minutes on medium heat, pressing down firmly all the while.

Turn over the chicken and remove any excess oil from the surface with some kitchen paper.

Add the butter, sliced garlic and honey and fry for a further 3-4 minutes. Keep basting the chicken with the sauce. Turn the chicken over again and fry for 2 minutes.

Remove the chicken from the pan onto a serving dish - it's best to place it skin side down which will make it easier to cut.

Pour over the sauce from the pan and enjoy with your favourite vegetables.
