Simple and Easy Cheese Pancake Japanese Style (Okonomiyaki)

My recipe doesn't use shop bought okonomiyaki powder or sliced meat...it just needs okonomiyaki sauce to make it delicious!

Ingredients

Sweetheart cabbage leaves 4
Leek 1/2
Egg 1
Grated cheese 5 tbsp
Green laver as required
Shop bought okonomiyaki sauce as required
Mayonnaise as required
Batter:
Plain flour 10 tbsp
Water  7 tbsp
Dashi stock granules 1 tsp

Method

Shred the leek and cabbage leaves a bit coarsely. Leek to cabbage proportion is 1 to 4, but use as you like. You can even do this without the leeks.

Make the batter.

Add the shredded cabbage and leeks and the egg and mix.

Grate your cheese - Cheddar works well, so does Camembert.

Put a little oil in a frying pan and heat it. Pour in half of the mixture from Step 3 and spread the cheese evenly over the top.

Pour the remaining mixture on top of the cheese and shape it nicely. Pan fry the pancake, keeping an eye on it that it doesn't burn.

After 5 minutes, turn it over and fry for another 5 minutes. Transfer to a serving dish and drizzle with the okonomiyaki sauce and mayonnaise in a pretty pattern and sprinkle with the laver.

Tips & Note

There is no meat in this pancake, but the volume of cheese makes up for it. I always bring back okonomiyaki sauce from Japan.
