Steak Diane

This is a typically flamboyant American sauce, not very subtle. It's named after Diane, but no-one knows who she is!

Ingredients

Your favourite steaks 2
Olive oil 2 tbsp
Butter 1 tsp
Shallot 1
Mushrooms 6-7
Salt & pepper as required
Garlic 1 clove
Brandy 4 tbsp
Dijon mustard 1.5 tbsp
Worcester sauce 2 tbsp
Double cream 200ml
Parsley as required

Method

Remove the excess fat and fibres from the steaks. Season with salt & pepper.

Put the butter and 1 tbsp olive oil in a frying pan on medium heat and fry the steaks for 4-5 minutes on both sides. Transfer to a plate.

Add 1 tbsp olive oil to the same pan and fry the finely chopped shallot.

After 2 minutes, add the sliced mushrooms and fry. Add the finely chopped garlic and season with salt & pepper.

Add the brandy and light it to flambe it.

Add the mustard, Worcester sauce and double cream and simmer to reduce the sauce.

Season to taste with the mustard, Worcester sauce, salt & pepper. Return the steak to the pan with its juices.

Cook the steaks to your preferred texture, basting with the sauce. Sprinkle with finely chopped parsley and serve with your favourite vegetables.

Tips & Note

The meat will be rare when you remove it after it browns at Step 2. When you return it to the pan at Step 7, it's completely under your control to cook as you like, so this dish cannot fail!
