Chargrilled Pepino Melon with Honey

A lovely breakfast or brunch option, try it with crispy streaky bacon!

Ingredients

Pepino melon 1
Icing sugar 2 tsp
Honey 2 tbsp

Method

This is a pepino melon. It's a South American fruit that tastes a bit like a cucumber mixed with nashi pear.

Heat the grill pan until it's very hot.

Cut the pepino melon in half lengthways and scoop out the seeds. Pat the cut surfaces dry with kitchen paper.

Carefully sprinkle a teaspoon of icing sugar around the top rim of each melon half.

Place the melon sugar side down onto the hot grill. Be careful, as it will bubble a little as the sugar caramelises.

Keep on the grill for 4 minutes - you want to get attractive lines on the surface so don't move it even though you might be tempted to!

Using a palette knife, carefully lift the melon and turn 90 degrees clockwise to achieve a nice criss cross pattern. Keep in the same position for another 4 minutes without moving it.

Remove from the grill onto a serving dish and fill the hollow with the runny honey.

Tips & Note

if you don't have a grill, you can use a frying pan but you won't get the distinctive pattern. I used Gale's Original Clear Honey, they also do a Lemon Curd that I might try next time. You could fill with maple syrup if you like, or even with a scoop of ice cream for a dessert!
