Crouton Boulders with a Blue Cheese Dressing

Ingredients

Bread loaf (small) 1/2 (200g)
Garlic 1 clove
Olive oil 1 tbsp
Salt & pepper a little
Flour 2 tsp
Vegetable oil 2 tsp
Blue cheese (Danish Blue) 3 tbsp
Milk 75ml

Method

Make the croutons: use your preferred loaf (I used a round wheat, spelt & rye loaf from Morrisons) and pull apart into large pieces.

Put in a bowl with the olive oil, crushed garlic, salt & pepper and mix to combine. Put onto an oven tray and in a preheated oven 180C for 10 minutes.

Make the blue cheese sauce: heat the oil in a saucepan and add the flour. Fry on medium heat for 2 minutes.

Turn the heat off and add the milk, whisking all the while. Turn the heat on and keep whisking, the sauce should thicken. Turn the heat off. Crumble in 2 tbsp blue cheese.

Place the crouton boulders on a dish and drizzle over the blue cheese sauce. Crumble over the remaining 1 tbsp blue cheese.

Tips & Note

You can use any blue cheese you like. This is ideal as a snack with a cold beer.
