Mont Blanc Fried Egg

The protein of the egg white combined with salt makes a firm meringue.

Ingredients

Egg 1
Salt a pinch
Vegetable oil 1 tsp

Method

Separate the egg whites and yolk. Add the pinch of salt into the egg white and mix to make a meringue with a hand blender.

The meringue is ready when you can successfully turn the bowl upside down without an accident!

Put the oil in a frying pan but don't turn the heat on. Scoop up the meringue with a spoon and drop into the frying pan in a tall peak, about 5cm high.

Make a hollow in the centre and drop in the egg yolk. Put the lid on and then turn the heat on to low.

Steam fry for 3 minutes then lift the egg with a fish slice and carefully transfer to a serving dish. Sprinkle with salt & pepper - enjoy!

Tips & Note

●This is a recipe from the egg somelier Yukari. It's a really interesting type of fried egg - essentially the same as a standard fried egg but much creamier and more indulgent - try it at the weekend!
