Sugar 1 part
White miso (without dashi) 1 part
Mirin 1 part

Method

Put all the ingredients in a small saucepan and put on high heat. Keep stirring.

Turn the heat down to medium when it starts boiling. Keep your eyes on it that it doesn't burn.

Turn the heat off when it starts to boil again, it's now ready.

When the sweet miso sauce (dengaku) cools, it should thicken to a dripping consistency. Transfer to a tupperware container and keep in the fridge.

This sauce goes brilliantly with fried aubergine, but is also delicious with fish or other cooked vegetables such as mooli.
