Pan Fried Crispy Hash Browns

An all American breakfast essential.

Ingredients

Potatoes 400g
Salt 1/3 tsp
Pepper as required
vegetable oil 1 tsp

Method

peel the potatoes and grate coarsely. Squeeze to remove the moisture.

Use kitchen paper to remove any excess liquid. Put into a bowl and add salt and pepper and mix by hand.

Put the oil in a frying pan on medium heat. Place spoonfuls of the potatoes (whole or individual) and pan fry for 15 minutes on one side.

Turn over and fry again for another 15 minutes. Remove when golden brown and serve with fried eggs.

Tips & Note

●Even though you fry these for 30 minutes, you don't really have to watch them all the time - make a cup of tea or pop out for a short time
●They are not deep fried and will go soft after a short while, so it's probably better to eat them while hot
