Asian Spiced Red Onion Galette with Egg

Ingredients

Red onion (medium) 1
Garlic 1 clove
Egg 1
Fish sauce (nam pla) 1/2 tsp
Coriander seeds 1 tsp
Cumin powder a pinch
Chilli flakes as you like
Water 50ml
Salt a little
Vegetable oil 1 tbsp

Method

Peel the onion and slice thickly to 1.5cm. To hold it together, pierce through in 3 places with cocktail sticks.

Crush the coriander seeds.

Heat the oil in a frying pan and fry the garlic on low heat until it seasons the oil. Remove the garlic.

Add the onion rings and fry until browned for 5 minutes. Keep turning.

Remove any excess oil from the pan with kitchen paper and add the water and fish sauce. Put the lid on and steam fry for 5 minutes.

The sauce should be reduced and the onion nicely softened. Add the crushed coriander seeds and cumin powder and stir in, frying all the time.

Transfer to a serving dish and sprinkle with the chilli flakes and salt.

Make a soft fried egg and place on top of the onion, it's now ready to serve, garnished with fresh coriander leaves and lemon wedges.

Tips & Note

It's better to remove the excess oil at Step 5 otherwise you might get splashed when you add the water and fish sauce.
