Pork belly 150g
Gherkins (small) 2
Fresh red chilli 1
Vegetable oil t tsp
Salt and pepper 2 pinches each
Onion 1/2

Method

Here's what you need.

Slice the pork belly into 5-6 mm pieces. Add a pinch each of salt & pepper and rub in well.

Slice the gherkins and chilli into 3-5 mm slices. Remove seeds if you prefer. Slice the onion into wedges.

Add the oil into a pan, and add the pork belly. Stir fry on medium heat till it's nicely browned.

Add onions, a pinch each of salt and pepper and fry for 1 minute. Add the gherkins and chilli. Stir fry for 2 minutes.

Good as an appetiser. Even better with steamed rice. Enjoy!
