Sweet Soy Simmered Pork Belly (Buta No Kakuni)

Ingredients

Pork belly 400g
Vegetable oil a little
Water as required
Sake 3 tbsp
Sugar 3 tbsp
Soy sauce 60ml
Ginger slices 6
Boiled eggs 4

Method

Fry the whole pork belly for 5 minutes in the vegetable oil to nicely brown the surface.

Transfer the pork belly to a large pan and add the water and ginger and bring to the boil. Remove any scum. Put the lid on and simmer for 1 hour on low heat.

Drain the pork and cut to bitesize pieces. Return to the empty pan and add the soy sauce, sake, sugar and boiled eggs and simmer for another hour on low heat.

Tips & Note

If you can, keep overnight in the fridge for a better flavour the next day.
